White Rice Bowl with Steamed Green Beans & Herb Dressing

When your kidneys aren't functioning at full capacity, every single ingredient on your plate matters more than you might think. Potassium, phosphorus, and sodium — three things that healthy kidneys filter out effortlessly — can build up to dangerous levels when kidney function is compromised. This bowl was built with that reality in mind. White rice is one of the most kidney-friendly carbohydrates available — low in potassium, low in phosphorus, easy to digest, and genuinely filling. Green beans sit at the safer end of the vegetable spectrum for kidney patients — just be sure to boil them (not steam) if your potassium levels are a concern, as boiling leaches out a significant portion. The herb dressing brings freshness and flavour without a single grain of added salt. This is clean, nourishing eating — exactly what your kidneys are asking for.

Ingredients

For the Rice Bowl
  • 160 g white rice
  • 320 ml water
  • 200 g fresh green beans trimmed
For the Herb Dressing
  • 2 tbsp extra virgin olive oil
  • 3 tbsp fresh parsley finely chopped
  • 1 tbsp fresh chives finely chopped
  • 1 tbsp lemon juice freshly squeezed
  • ¼ tsp garlic powder
  • 1 pinch black pepper

Equipment

  • 1 Medium saucepan For the rice
  • 1 Medium pot For the green beans
  • 1 Small mixing bowl For the dressing

Method

  1. Rinse your white rice under cold water until the water runs clear — this removes excess starch and gives you fluffier, lighter rice. Add the rinsed rice and water to a medium saucepan, bring to a boil over medium-high heat, then reduce to the lowest possible heat, cover with a lid, and cook for 15–18 minutes until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  2. Trim the ends off your green beans. If your potassium levels are elevated, bring a pot of unsalted water to a boil and cook the green beans for 5–6 minutes — boiling leaches out a significant portion of potassium. If potassium is not a concern, steaming for 5 minutes works perfectly. Either way, you want them tender but still with a slight bite — not soft and limp.
  3. While the rice and beans are cooking, combine the olive oil, chopped parsley, chives, lemon juice, garlic powder, and black pepper in a small bowl. Whisk or stir well until combined. Taste it — it should be bright, herby, and fresh. No salt needed — the lemon juice does all the heavy lifting here.
  4. Divide the rice between two bowls. Arrange the green beans on top. Spoon the herb dressing generously over everything — don't be shy with it, this is where all the flavor lives. Finish with a few extra fresh parsley leaves if you have them. Serve immediately while warm.
