Peel and dice your sweet potato into roughly 1.5cm cubes — keeping them uniform means they cook evenly. Dice the bell pepper, finely chop the onion, and mince the garlic. Having everything prepped before the pan heats up makes this recipe genuinely effortless.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3–4 minutes until softened and translucent. Add the minced garlic and cook for another minute — just until fragrant. Don't let it brown, just soften.
Add the ground turkey to the skillet and break it up with a wooden spoon. Cook for 5–6 minutes until fully cooked through and no longer pink. Stir in the turmeric, cumin, and black pepper now — coating the turkey directly in the spices gives you a much deeper, richer flavour than adding them later.
Add the diced sweet potato, red bell pepper, and water to the skillet. Stir everything together well. Cover with a lid and cook on medium-low heat for 12–15 minutes, stirring occasionally, until the sweet potato is completely tender when pierced with a fork.
Remove the lid and let any remaining liquid cook off for 1–2 minutes. Taste and adjust pepper if needed — no salt. Scatter fresh parsley generously over the top and serve straight from the skillet.
