Thinly slice the zucchini into rounds about 3–4mm (⅛ inch) thick. Halve the cherry tomatoes. Chop the chives and parsley. Set everything aside before the pan heats up.
Heat the garlic-infused olive oil in an oven-safe skillet (20–22cm / 8–9 inch) over medium heat. Add the zucchini slices in a single layer and cook for 4–5 minutes, turning once, until lightly golden on both sides. Garlic-infused oil is non-negotiable here — regular garlic is a major IBS trigger for most people.
Add the halved cherry tomatoes to the skillet and cook for 1–2 minutes until they just begin to soften. Scatter the chopped chives and parsley over the vegetables and stir gently.
Preheat your grill/broiler to medium-high. Crack the eggs into a bowl, add the black pepper, and whisk well. Pour the egg mixture evenly over the vegetables in the skillet. Cook on the stovetop over medium-low heat for 4–5 minutes until the edges are set but the centre is still slightly wobbly. Scatter parmesan over the top now if using.
Transfer the skillet under the grill/broiler and cook for 3–4 minutes until the top is golden and fully set. Watch it carefully — it goes from perfect to overdone quickly. Remove, let it rest for 2 minutes, then slice and serve directly from the pan.
