Place your buckwheat groats in a fine mesh sieve and rinse thoroughly under cold water for about a minute — this removes the natural bitter coating and gives you a cleaner, nuttier flavour. Shake off the excess water.
Add the rinsed buckwheat and water to a medium saucepan. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 12–15 minutes until the water is mostly absorbed and the buckwheat is tender but still has a slight bite. Stir occasionally to prevent sticking.
Remove from heat. Stir in the chia seeds, ground cinnamon, and vanilla extract. Mix well and let the porridge sit covered for 3–4 minutes — the chia seeds will absorb the remaining moisture and thicken everything into a creamy, satisfying consistency.
Divide the porridge between two bowls. Top generously with fresh blueberries and raspberries. Sprinkle the remaining chia seeds and a pinch of cinnamon over the top. No sweetener needed — the berries bring all the natural sweetness this bowl requires. Serve immediately while warm.
