Ingredients
  

For the Energy Balls
  • 120 g rolled oats
  • 3 tbsp raw cacao powder
  • 8 Medjool dates pitted (approx. 160g)
  • 2 tbsp espresso cooled
  • 40 g raw almonds roughly chopped
  • 1 tbsp raw cacao nibs
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract unsweetened
For Rolling
  • 2 tbsp raw cacao powder

Method
 

  1. If your Medjool dates are very firm, soak them in warm water for 5–10 minutes to soften. Drain well and pat dry before using.
  2. Add the pitted dates and cooled espresso to a food processor and blitz until you get a smooth, sticky paste — about 30–60 seconds.
  3. Add the rolled oats, raw cacao powder, ground cinnamon, and vanilla extract to the food processor. Pulse 8–10 times until combined into a thick, sticky dough. Add the roughly chopped almonds and cacao nibs and pulse 2–3 more times to incorporate — keeping some chunky pieces for texture.
  4. Transfer the mixture to a bowl. If too sticky to roll, refrigerate for 15 minutes. Scoop a heaped tablespoon of mixture and roll firmly between your palms into a ball. Repeat until all mixture is used — around 12 balls. Roll each ball in the raw cacao powder to coat evenly.
  5. Place the finished energy balls on a lined tray and refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 5 days.

Always use raw cacao powder — regular cocoa powder is heavily processed and loses the epicatechin compounds that support portal blood flow.
