- If your Medjool dates are very firm, soak them in warm water for 5–10 minutes to soften. Drain well and pat dry before using.
- Add the pitted dates and cooled espresso to a food processor and blitz until you get a smooth, sticky paste — about 30–60 seconds.
- Add the rolled oats, raw cacao powder, ground cinnamon, and vanilla extract to the food processor. Pulse 8–10 times until combined into a thick, sticky dough. Add the roughly chopped almonds and cacao nibs and pulse 2–3 more times to incorporate — keeping some chunky pieces for texture.
- Transfer the mixture to a bowl. If too sticky to roll, refrigerate for 15 minutes. Scoop a heaped tablespoon of mixture and roll firmly between your palms into a ball. Repeat until all mixture is used — around 12 balls. Roll each ball in the raw cacao powder to coat evenly.
- Place the finished energy balls on a lined tray and refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 5 days.
NOTES
This recipe was created specifically for people managing Liver Cirrhosis with Portal Hypertension. Always use raw cacao powder — regular cocoa powder is heavily processed and loses the epicatechin compounds that support portal blood flow. Espresso is used in a small, controlled amount — excessive caffeine is contraindicated in advanced cirrhosis. Limit to 3 balls per serving and do not exceed 6 balls per day.
