DIAGNOSIS: FATTY LIVER DISEASE (NAFLD)
Liver-regenerating. Sugar-free. Indian comfort food that heals from the inside.

Indian Spiced Lentil Dal with Cauliflower & Turmeric
Fatty liver disease means fat has built up inside your liver cells — and your liver is struggling to do its job properly as a result. The good news is that the liver is one of the few organs that can genuinely regenerate itself, given the right conditions. This dal was built to create exactly those conditions. Lentils are extraordinarily liver-friendly — high in plant protein and fibre, they actively reduce liver fat by improving insulin sensitivity and slowing glucose absorption. Cauliflower delivers sulforaphane, a compound increasingly linked to reduced liver inflammation and improved detoxification pathways. Turmeric brings curcumin — one of the most researched natural compounds for liver protection, directly reducing oxidative stress in liver cells. And the spice blend here does more than add flavour — cumin, coriander, and ginger all carry anti-inflammatory properties that support liver recovery. This is Indian comfort food doing serious medical work.

Method
- Heat the olive oil in a large saucepan over medium heat. Add the finely chopped onion and cook for 4–5 minutes until soft and golden. Add the minced garlic and grated ginger and cook for another 2 minutes until fragrant. Add the ground turmeric, cumin, and coriander — stir directly into the oil and cook for 1 minute to bloom the spices.
- Pour in the canned chopped tomatoes and stir well, scraping any spices from the bottom of the pan. Add the rinsed red lentils and vegetable broth. Stir everything together and bring to a gentle boil.
- Add the cauliflower florets to the pan. Reduce the heat to low, cover with a lid, and simmer for 20–25 minutes, stirring occasionally, until the lentils have completely broken down and the cauliflower is tender. If the dal looks too thick, add a splash of water and stir.
- Remove from heat. Stir in the lemon juice and black pepper. Taste and adjust seasoning. Divide between two bowls and scatter fresh coriander generously over the top. Serve as is or with a small portion of brown rice.
NOTES
This recipe was created specifically for people managing Fatty Liver Disease (NAFLD). Red lentils are used deliberately — they break down completely during cooking, making them exceptionally easy to digest and ideal for a stressed liver. Always use canned tomatoes with no added salt. Turmeric is most effective when combined with black pepper — the piperine in black pepper increases curcumin absorption by up to 2000%. Always consult your doctor or nutritionist before making significant dietary changes.
